Spinach Spatzle recipe



  • Spinach boiled and sliced ??200 g
  • Flour 00 250 g
  • Small Eggs 3
  • Water 100 ml
  • Sale till q.b.
  • Grated nutmeg q.b.

Ingredients for speck and cream seasonings


  • Sliced ??thin speck 100 g
  • Bread 30 g
  • Liquid fresh cream 250 ml
  • Black pepper q.b.
  • Sale till q.b.
  • Chopped chives 2 tablespoons


Chop the spinach and put them in a blender together with eggs, water, nutmeg and salt; shake the ingredients and reduce them to a smooth and fine cream.

Pour the spinach into a bowl and slowly add the flour mixed continuously to mix everything, then let it rest for a few minutes.

Boil the water on fire and in the meantime, take the ingredients to use for the seasoning: chop the chives and the speck and pour it in a frying pan in which you melt the butter (or warm it up 2 tablespoons of extra virgin olive oil).

Sprinkle the speck and then add cream, pepper, chopped chopped herbs and salt. Place the dough of the spätzle in a crushing pot with large holes and position the tool over the boiling pot of water and then squeeze it to make the dumplings go out.

The spätzle that will fall into the hot water will be cooked when they reappear on the surface; then take them with a schiumarola, drain well and transfer them to the pan to make them jump for a few seconds in the cream and speck seasoning. Serve spätzle immediately.
