Apple strudel


  • 300 grams of puff pastry
  • 1 kg of apples
  • 100 grams of breadcrumbs
  • 100 grams of sugar
  • 40 grams of pine kernels
  • 40 grams of sultanas
  • Cinnamon to taste
  • 1 grated rind of lemon


Peel and slice the apples. Mix the apples, sultanas, pine kernels, sugar, lemon rind and cinnamon together. Finely roll out the puff pastry using a floured rolling pin.

Sprinkle the puff pastry with some breadcrumbs and place it uniformly over the apple filling.

Spread some egg yolk onto the ends using a brush, roll the pastry and close the ends. 

Cover the surface of the strudel with the remaining egg yolk, bake at 200° for about 30 minutes. Before serving, dust with icing sugar.
